Easy Coconut Cupcakes

  • Serves: 4 People

  • Cook time: 20 min

Ingredients:

  • 1 cup flour
  • 1 cup sugar
  • 1/2 tsp. baking powder
  • Pinch of salt
  • 1/2 cup flakedcoconut
  • 8 oz. butter
  • 1/2 cup sour cream
  • 3 eggs
  • 1 tsp. vanilla essence
  • 1/2 tsp. coconut essence
  • For icing
  • 4 oz. butter
  • Icing sugar 1 cup
  • 1 tsp. vanilla essence
  • 1/2 tsp. coconut essence

Directions:

  • Preheat oven on 180 put liners in cupcake tray beat butter and sugar till light and creamy add eggs one by one with essence add flour and sour cream gradually fold in 1/2 of the coconut pour in the cupcake cases bake for 20-25 minutes.
  • Beat all the ingredients till thick once cupcake baked bring to room temp.
  • Dip in icing sprinkle remaining half flaked coconut and serve.
